A well-run lobby shop will generate $1000 a day in revenue and dozens of terrific guest experiences. Not everyone has typical "hours" and a "need" is often a need in the middle of the night.

I was visiting one of our in-hotel lobby shops last week and a guest walked in and asked me, "When does the shop close?" I said that our shops are all open 24 hours a day. They were shocked, surprised and very pleased.

Did you know that the busiest hours for an in-hotel grab and go lobby shop are from 5-9am and 8pm to 1am?

A well run grab and go pantry space will generate $1,000 a day in revenue and dozens of terrific guest experiences.

The reason for this is that guests consider their hotel as their home away from home.

In fact, hotels are a small city that guests look to for all of their needs through a full 24 hour cycle.

The average hotel has 141 people on their property on any given night. While some of us have a rhythm that is more typical to being up at 630am and in bed by 10pm, the moment by moment needs of 141 guests means that a hotel needs to be ‘open for business’ in every capacity 24 hours a day.

When it comes to food, beverages and travel essentials, it is guests ‘needs’ more often than a ‘want’.
